With a background that blends science and world-class pastry kitchens, Weller approached the challenge differently from the start. “Before pursuing baking, I worked as a chemical engineer and made a career change at thirty to attend the French Culinary Institute, now the Institute for Culinary Education,” she explains. “That analytical background still shapes how I develop recipes and solve problems.” After training at the Institute of Culinary Education and working in elite kitchens like Per Se, Babbo, and Bouchon Bakery, she developed a deep understanding of precision, and a curiosity about making allergen-free baking truly exceptional.
That curiosity became the backbone of Bub’s. “We had to start from scratch,” Weller says. “The first recipe was a birthday cake for Jenn’s husband, and there was nothing to reference.” What followed was more than two years of intensive research and development. “We weren’t just swapping ingredients; we were creating entirely new recipes. We’ve refined every element, all designed to taste as indulgent and satisfying as traditional baked goods.” Every pastry on the menu is built using custom flour blends designed specifically for that item, a level of detail rarely seen even in traditional bakeries.
The result? A menu filled with nostalgic favorites that feel anything but limited. Think cinnamon rolls, kouign amanns, cupcakes, and banana pudding — reimagined without wheat, dairy, eggs, nuts, or soy. “Those are the foods people associate with comfort and celebration,” Weller says. “We wanted everyone to have access to that experience, regardless of their dietary restrictions. Recreating familiar favorites makes Bub’s feel inclusive and nostalgic.”
What makes Bub’s stand out isn’t just what’s missing, it’s what’s possible. “We never wanted Bub’s to feel restrictive,” she explains. “The goal was to create baked goods that taste just as good as traditional pastries, if not better, and stand on their own rather than as substitutes.” That philosophy shows up in every bite, where flavor, texture, and overall experience come first.
Of course, getting there wasn’t easy. “The biggest challenge was meeting expectations for texture and structure,” Weller admits. “Without ingredients like eggs, butter, or wheat, those elements are harder to achieve.” But through relentless testing and innovation, the team created desserts that don’t just meet expectations, they exceed them.
For customers with food allergies, Bub’s offers something even more valuable than great taste: peace of mind. “Everything we make is free from the top nine allergens, removing much of the risk guests usually worry about,” says Weller. Transparency is key, with clear ingredient labeling both in-store and online, allowing guests to enjoy every bite with confidence.

It’s about sitting at a table where no one feels left out when dessert arrives. “We hope Bub’s shows that allergen-free food can be just as high quality and exciting as anything else,” Weller says. “The goal is to create a space where everyone can enjoy great food together.”
Even the name carries heart. “Bub’s” comes from Jenn’s nickname for her husband, the very person whose challenges inspired it all.
